Take salsa more as a modular dance than anything. You can start by making sure that you can do the individual segments of the dance (e.g. enchuflas, cross-body leads, cross-body lead turns etc) well. Once you've gotten the modules done spot on, then you can start by stringing them up into different combinations. (e.g. Cross-body lead turn, enchufla, etc). How well you dance in fast music is well you can adapt your leading to suit the partner.
For the partner, she just has to learn to relax and let the guy take control. If the lady can just feel the lead instead of guessing, there is a higher chance of the guy being able to lead successfully and the lady not getting injured in the process.
Summary: To dance well with fast music, make sure you're able to dance the moves well and smoothly. After all, at the end of the day, the lady would prefer to dance with someone who leads simple moves well, then dance with someone who does advanced moves but gets the lady all injured and bruised.
References :
You should look into taking some classes. The dances that you're referring to - salsa, tango, swing - are danced to music that is specific to these dances. You can't dance salsa to any fast music, it needs to be salsa music. Why don't you look into taking group ballroom dance classes at your local dance studio. Ballroom includes salsa, swing, tango and many other dances that are a lot of fun. Look for studios near you in the dance directory here: http://www.accessdance.com or http://www.ballroomdancers.com Community colleges also tend to have inexpensive evening classes. You might want to invite your girlfriend along. Maybe you want to surprize her, but she needs to learn ladies's steps for this dances too.
References :
Ballroom dancing has a couple dances that suit fast music.

For example the quickstep is done at around 200 beats per minute. And you should have body connection from hip to chest with your partner all the time. No grinding. lol
References :
There are lots of options. Take some ballroom (Latin/rhythm) lessons to discover a few.
References :
The only way to fast dance with out grinding would be for
both you and your partner to wear rollar skates and leave your
coffee grinder on the kitchen counter !!
References :
No source available
